How to Make Dinosaur Mini Waffles

  1. Beat the egg whites: Separate the yolks and egg whites. Beat the egg whites for the most fluffy dinosaur waffles. Don’t stop until stiff peaks form. Set aside.

  2. Make the yolk mixture: In another bowl, beat the egg yolks, sugar, milk, oil, and vanilla extract until smooth. Add the flour mixture to form the batter and beat until just combined. Fold the egg whites into the dinosaur waffle batter, working in batches, until no white streaks remain.

  3. Bake: Preheat your mini donut maker according to the manufacturer’s directions. Lightly grease the preheated donut maker with cooking spray. Fill each hole with batter. Bake for three to five minutes or until golden. Carefully remove the hot waffles from the waffle maker. Serve with fresh fruits.

Storing and Freezing Instructions

To Store: Dinosaur waffles will stay fresh for up to three days. Wrap them tightly or store them in a ziplock bag or covered container to prevent them from drying out or absorbing fridge smells. 

To Freeze: For longer storage, waffles can be frozen for up to three months. Just stack them, wrap them, and put them in the freezer. To thaw, leave them in the refrigerator overnight and reheat in a toaster.

Recipe Variations for Dinosaur Waffles

Chocolate chip waffles: Stir half a cup of chocolate chips into the batter.

Banana dinosaur waffles: Mash two ripe bananas and add them to the batter.

Cinnamon swirl waffles: Mix two teaspoons of ground cinnamon with a quarter cup of brown sugar, then swirl it into the batter before cooking for a cozy cinnamon flavor.

Coconut twist: Sprinkle shredded coconut on top of each waffle before closing the lid to bake them.

Peanut butter waffles: Add a quarter cup of creamy peanut butter to the batter. Top with raspberry jam. 

Blueberry waffles: Gently fold half a cup of fresh blueberries into the batter.

Lemon zest twist: Stir in two tablespoons of fresh lemon zest into the batter.

Ingredients 

  • 2 cups all purpose flour
  • 1 tbsp baking powder
  • ½ tsp salt
  • 2 tbsp sugar
  • 2 large eggs divided
  • 1 ⅔ cups milk
  • cup oil or melted butter
  • 1 tsp vanilla extract

Instructions

  • Add the flour and baking powder and beat until just combined.

Notes

  • Fold, don’t mix: When adding the egg whites, work in batches and fold the batter over itself. Beating will cause the egg whites to deflate and will also cause overmixing, which will lead to tough, rubbery waffles. 
  • Don’t overfill: Fill each waffle mold with batter just until the top, avoiding overfilling to prevent excess batter from overflowing and creating messy edges.
  • Removal tip: Carefully remove the hot waffles from the waffle maker using a fork or silicone-tipped tongs to prevent burns. Be gentle and try not to scratch the waffle maker. 
  • Customize: Serve the freshly baked dinosaur mini waffles with your choice of toppings, such as fresh fruits, nuts, syrup, or whipped cream, for a delightful breakfast or snack.
